Description Crawfish shells are the hard, cleaned, outer casing of the crawfish. Crawfish or rather referred to as Crayfish, are freshwater crustaceans that look like little lobsters. There are over 400 species of crawfish worldwide, over half are indigenous to North America. Furthermore, approximately 90 percent of the farmed crawfish in the United States come from Louisiana.
